The current version of OS X wouldn't have helped a bit. The OS did just what it was supposed to do, i.e. save the edited file.
The problem is that Photoshop doesn't store the edit history when it saves the file, so if you make a mistake *and then save and close the file* you have no way to undo the mistake.

The next version of OS X (10.5/Leopard) will offer the option to roll back to an earlier version of the file, but that version won't be out for a few months.

I have a great piece of backup software here at the office called Deja Vu, and I have it set to back up all new files every evening... So assuming you had discovered your mistake that day, you could go to the backup folder and get a day-old document.

That is really a shame -- I have done it rarely, but it's a horrible feeling. I accidentally ditched all of a client's layered photos of their food (they sell organic frozen meals), but luckily it never mattered, since all color corrections had been done, and they reshot everything this year! That was a bullet dodged for me.
