An armor guy, who builds airplanes almost exclusively, that he converts to space fighters-- all while admiring ship models.

So if I took the Airfix 1/48 Stuka, slung some panniers under wing and under fuselage, put it into a bush pilots hands,  and gave it a diesel engine, that would qualify?    :o

Diesel punk is kind of like Indiana Jones or the Rocketeer, kind of like 1920s 1930s and 1940s tech. Like flying wings and luft46 stuff. So basically a prop, piston with say a Rocketeer thrown in if desired. The stuke by itself would qualify just fine.
