As I'm currently into biplanes and finding the rigging a satisfying past time I have been using Florist wire - Galvanised Stub Wire to give it it's 'professional' name. Comes in many lengths and thicknesses but for 1/72 kits I use the Oasis 28swg which is 0.38mm thick (so around an inch in real life). Easily cut but you have to treat it gently as it bends very easily.

I get mine from Hobbycraft in packs of about 30 wires all approximately 7" in length for less than £5 (in the UK). Probably use 3 to 4 wires for a single aircraft.
