I have a project underway and I'm at the usual stage where I stall out over painting. Does anyone know of a site that lists aircraft (and maybe armor) camo schemes including FS numbers? Given a number of hours I could research all the patterns and numbers but that just sucks the fun out of things. If there was already such a source it would save me a lot of time. If such a thing does not exist is there a good place to gather such info for the use of those that peruse this site?

You could try http://www.ipmsstockholm.org/colorcharts/stuff_eng_colorcharts_using.htm
That should give you a paint guide.
Otherwise try David Klaus's paint guide he did for the IPMS, I believe you could obtain

The British have raised their security level from "Miffed" to "Peeved". Soon though, security levels may be raised yet again to "Irritated" or even "A Bit Cross". Londoners have not been "A Bit Cross" since the Blitz in 1940 when tea supplies ran out for three weeks

Stockholm has the color charts which is great. I was thinking of a library of paint schemes and patterns with color references to go with it.
For armor folks vodnick.net has some good info on his website.
The reason I ask is that I'm working on a whiff F-101C that has survived to serve in the near past. I can't decide if I want a F-15 style pattern or the Hill F-16 as applied to some Phantoms. Or possibly some thing else. If I had a place to go to and compare patterns and colors it might make this project move forward. I had something of the same problem with the Patton/Bradley build.
Maybe this is something I could start and others could contribute to as time goes on.

One great and vast source of aircraft profiles and some paint schemes (sometimes with manufacturer references or FS numbers) is "Wings Palette" from Russia: http://wp.scn.ru/en/ There's also a section about colors and historic background. Handling of the page is tricky, though, takes some time to get used to it.

Another, more obscure one is http://www.jpsmodell.de/dc/ which contains a lot of information - not 100% true, IMHO, but also a  good basis for legwork. Esp. impressive: the many German Luftwaffe schemes that were tested in the late 70ies.
