Usborne cut-out castles

I came across two used Usborne cut-out models of castles.  The scale is unknown but slightly bigger than 1/72. One depicts a Medieval Castle with a chapel and small buildings, with towers and a wall, the other a Castle Keep. It looks like both were started but some pieces have gone missing from both books.
My intentions are to build each castle and kitbash so they merge as one. I  will use papers to create the exterior as the printed card is a bit too glossy ,with plastic drain pipes from model railway scenic 00/Ho kits.
Anti-aircraft guns and bunkers placed around the castle walls with soldiers or military vehicles, perhaps a helipad with a radar installation.
I'm not too sure on what period to go for, any ideas?
