Well, that scene is not too far-fetched! The use of F-14s in the Macross universe (esp. when the VF-1 was still under development) is canonical, and a mock air combat scene was just too good to be ignored for the VF-X. 

IIRC Hasegawa even did (at least) a kit with a Tomcat with U.N. Spacy markings, you can fly one in a Macross Zero flight simulation PC game (I think that's whatthe kit actually belongs to as merchandize stuff), and there's a lot of fan art to be found online, since the F-14 is clearly the VF-1's inspriration.
