BdB, another 'easy' option would be to modify an existing build.  Especially any kit that's a bit worse for wear, bits fallen off, decals looking shabby etc. or a kit you were just never satisfied with when you finished it originally.  Easiest approach would just to give it a new paint job & decals, or you could do as much or as little styrene surgery as you please.
