Many industries do that just because M$ products are so darn flaky when they're first released. By the time they're a whole generation out of date the 'First Buyer Mugs' have reported all the bugs, M$ have fixed them and the product is more reliable.

Our motor industry and defence customers tended to be even more conservative and worked two generations behind M$. Many stayed with Windows NT even after Win 7 was released.
Kit's Rule 1 ) Any aircraft can be improved by fitting longer wings, and/or a longer fuselage
Kit's Rule 2) The backstory can always be changed to suit the model

...and I'm not a closeted 'Take That' fan, I'm a REAL fan! :)

People could of course forsake Micro$oft complete if they desired, as I have and go down the Linux route.   I changed over about 18 years ago and haven't looked back.   I use it professionally and privately.   :thumbsup:
