Yeah, there's usually enough problems maintaining your grip with all the blood/bodily fluids as it is - loose paint further complicates matters...  ;)

And it makes the cleanup that little bit harder.

I remember reading somewhere, somewhen, that Australian soldiers & tankers used to strip the paint off tools in both North Africa & the South West Pacific, & treat them with linseed oil, because the paint got too hot & was slippery in sweaty hands, & didn't protect the wood from drying out or mould.

You are right, of course, that this particular Sherman never existed IRL so maybe if it had, it would have had white-painted cupola hatches from the factory :)

(FWIW, the only American vehicle from the Second World War that I can remember offhand with white inner faces to the crew hatches as standard is the LVT (4).)
