Would it be advisible to use a hairdrier to dry paint on large scale ship models, or would it ruin the finish?

You'd have to be very careful not to melt or warp the plastic. IDK about the effect on the paint.

One thing that helps me to get the paint dry quicker is to leave the painted kit under my modelling desk light. It tends to quicken the drying time somewhat. Although, I tend to do do a lot of my painting in the evening and let it dry/cure overnight. No wasted time that way.

I can see two possible problems;

i) the airflow could cause the paint to flow too, causing ripples

ii) you may wind up blowing a load of airborne dust onto it

I agree with Lance, I've used a lamp for drying and it seems to work fine.
