Waterline.  Which is somewhat ironic since my last two ships were full hull and had wings.

In terms of display and space, 1/700 and waterline offer the best detail for space consumed for me.

Lots of 72nd or near 72nd to use.
Everything from the Revell 1/72 DGzRS Hermann Marwede Rescue Ship (05238) to Lindbergs tugs (1/84 I think) to HO scale sailing craft (small yacht size in 72nd).

Think that would make a cool diorama.

Hmmm, didn't think about the Hermann Marwede, there's the DGzRS Arkona as well.  Something ironic about a Lifeboat rescuing a lifeboat! ;D
I don't think it's nice, you laughin'. You see, my mule don't like people laughin'. He gets the crazy idea you're laughin' at him. Now if you apologize, like I know you're going to, I might convince him that you really didn't mean it.

And they rocked.

I prefer full hull just to show it all off, but some modelers are awesome with water and just make the ships look incredible, not to mention the diorama possibilities...
