Neither are heavily armoured enough.  The Nashorn in particular is very thinly armoured.  The key point as to why the Churchill was chosen as the AVRE was the fact there was more than adequate room inside the vehicle for engineering stores.  The Sherman was rejected explicitly because of the limitations imposed by the lack of space in the hull.  In the Churchill you could store engineering stores in the sponsons, between the tracks.  Further, they stripped out the insides to make room for even more stores, including removing the turret basket.   If you were looking for a German equivalent, I'd suggest the Brumbar:



It has a large gun, plenty of room inside the hull for engineering stores.
