If you look on most auction sites the range of Ford 1/24 plastic model kits covers most of the popular range of their cars , all except the Ford Cortina.
In the UK the model was known as the Cortina and in Germany the Ford Taunus. From this parts were used on the Ford Transit and Ford Capri.
From the Cortina the Sierra and Mondeo.
Various countries produced their own versions of the basic model. Hyundai built the Stellar based on the Mk5 model.
Kits:
The GT40, Fiesta , Focus and Zakspeed Gr5 are in stock.
Tamiya does the Zakspeed Capri  and Sierra RS500  3 door and the 4x4 3 door road car.
Academy Capri RS 3100 motorized kit
Doyusha Capri Mk1 (although there's room for a motor)

There are model kits of the Ford Taurus (Granada sedan).
The nearest model kit that resembles the Cortina is the Aoshima Nissan Skyline.

Revell has a suggestions page and the Ford Cortina Mk4/5 seems a popular choice to be released.

Perhaps because many of the non-Cortina models are competition related, Focus RS, Fiesta WRC etc. and they sell better?

AFAIK Ford never made a Cortina that was competition related, other than the Mk 1 & 2 Lotus Cortinas and the related Cortina GT of the same period. Having driven a Mk 5 estate for 3 years I know WHY they didn't do that, because it was a barge! Ok, it was a well put together, reliable BIG barge, but it was a barge nonetheless.

I'd quite like a kit of a Mk 5, so long as they did an estate version, as it would bring back memories of the old thing.
Kit's Rule 1 ) Any aircraft can be improved by fitting longer wings, and/or a longer fuselage
Kit's Rule 2) The backstory can always be changed to suit the model

...and I'm not a closeted 'Take That' fan, I'm a REAL fan! :)

I remember having to put a paving slab in the boot to get some traction in the freezing weather or in snow.

I never had that problem, the back half was always full of tools and control systems!  ;D

Plus I had snow straps in those years, before traction control became widespread.

I think I've found what I was looking for, the 1990 Ford Mustang. This looks like the Ford Escort I had on an A-reg plate back in the 1980's but on steroids. With a few minor adjustments it could even look like the European Ford Cortina 3 door, although the Cortina was never sold as a hatchback. 2 door, 4 door and 5 door estate.
Found a 1/25 kit on eBay.
Also came across the Daytona car transporter, looks like my old Tonka all metal truck from my childhood.

Ford Motor Sport had a range of RS (rally sport) cars. The Ford Fiesta, Escort, Capri and Sierra. Never saw a Granada badged RS or Scorpio. And the Cossies-Cosworth engine. In the Granada/ Scorpio sedan and Sapphire-four door Sierra.

They still do, the Focus RS has been a 'Halo Car' in the Ford range for some years, and the latest version is due to be announced  next month.

Ah, Cortina.  On the 'my Dad had one of those' list, I think he had every mark through the years.  Main memories are of a copper-brown Mark 3 with black vinyl roof, Gene Hunt style.  I'd definitely have a kit if one was going.

Airfix did a Lotus Mk.1 if I remember.  Frog too?

Airfix surely did, in 1/32 scale both in static and slot-racing versions.

It was a Mk 1a actually with the updated grille and Aeroflow ventilation grilles in the dash and C posts. I had a slot racer, just 'slightly' modified with twin Microperms glued into a cigar tube chassis so it was a Lotus Cortina 4x4.  ;)

A Mk 1 Cortina is the only car I have owned. My brother got it for me and drove it down from oop North. That was before they discovered my eye condition makes me a lethal driver although strangely they can't legal prevent me from doing so. After I'd decided I'd kill myself and a few others and been advised not to drive it was used as a "privacy lounge" whilst courting and then sold to a guy who wanted to use it in the stock car world.

After that I bought, but never owned a Ford Thames van (very useful when first married) and then a Triumph Spitfire. The lady wife owned and drove them.

Have I missed not driving ? Not really because a( I never did and thus can't compare to the old days and b) because living in London we have a superb public transport system. If I lived in the sticks it would probably have been different.

There's quite a range of Ford Mustangs in various scales and as the Capri was based on the design, it seems to me a Whiffing opportunity has arisen.
By using parts from a 1/24 or 1/24 Capri on a donor Mustang. The headlights changed to quads, grill replaced, and the D pillars added. If I can get two models with roughly the same dimensions it would work.
