Cupcake Landers does some gorgeous KSP videos. His craft are super 'cheaty' (full fuel tanks clipped through other full fuel tanks) but you just have to take it as sci-fi not simulation.

Scott Manley's done a presentation about how Kerbal Space Program helps science educators by engaging and enthusing kids. Really worth watching for anyone engaged in physics or science teaching.
