the canopies are grey plastic left unpainted, but at least on the picture it looks like a canopy indeed 

and in the kit there were even metal parts for the struts but that was too small for me, I skipped them

It does indeed look like a canopy in  that picture. Struts in 1/700 I struggle in 1/72

This one is a hit! I wonder how it would look with the wing in a higher position? Might just have to try this.

but then with the up-back engines of the A-10

This is sick, but looks great!  I'd just place the engines somewhat higher, and maybe the wings to a shoulder position? The single tail looks good on the A-10, too!
