To me the M's undercarriage looks completely different. 

Although, to simplify things, I will probably use the original main legs.  I'll look for a replacement nose leg, and I have the wheels/tyres off the Tornado.

Hate to drop a potential swing-wing fly in the variable-geometry ointment, because I love this build, but when wings swing aft, the center of lift moves aft relative to the center of gravity, so you need a bigger tail (or longer moment arm) for stability and control (look at F-111 and Tornado)...

Too late now, I have done all the work to the tail.

That sounds sweet. I considered something similar for a "normal" naval Jaguar a while ago, but with VG wings this should look awesome.
My build is supposed to be a late 80ies RAF aircraft, maybe based in Germany (replacing Phantoms or standard Jaguars).

I was looking at the cutaway drawing of a Jag in my Encyclopaedia of Combat Aircraft today.  Did they all have an arrestor hook?  The drawing, which purports to be a GR1 shows one.

Short answer "Yes"

It was for the airfield arresting system installed at some airfields by the RAF. I remember seeing some pictures of some aircraft, either Jaguars of Phantoms in the 70's using the system in Germany but I don't remember any details, sorry  :-\
