Cockpit near the tail makes anything look more racer 

Realistically (sorry. I don't mean to give you a headache), you need to make sure the landing gear allows raising the nose for take-off and landing.

You are right: even with the bubble version (less aerodynamic), we can build racer looking ones with the rear cockpit!

And for maximum speed, more engines may be added under the wings, tandem doubles also:
