Couple of thoughts:

Grant conversions wouldn't have had the option of using the Lee commander's cupola: I wonder if a Humber Armoured Car or Mk.VI light tank turret would fit?

You could fit the main turret ring with a four-piece bi-fold hatch like the FV432 roof hatch. Happily, if you angle it to miss the turret when it's open, it also provides a bit of protection from the front.
